"Thin" Mints

It's that time of year. I'm in trouble and here's why:


I order mine from my niece, Abby, who lives in Ohio. I can't remember if I ordered 8 boxes, or 10 boxes, but who's counting? Of course that means I have to wait until I visit her, or she visits me, to get my cookies. The problem with that is my Girl Scout Cookie craving officially started last Thursday, with no cookie booths in sight. So what's a Thin Mint-starved person to do? Well, on that same Thursday my daughter came home to report the most amazing sight. Drive-thru Girl Scout Cookie sales! And it's right on the road I take home from work! They have a circular drive, so you can just pull through, order your cookies from a cute little girl and her mom, and pay right there. What a genius idea! Now I can satisfy my craving without even getting out of my car.

Of course this is not a good thing. I don't know about you, but I can eat a whole sleeve in one sitting. I counted, and that's 16 cookies and 640 calories. I've never chowed down a whole box at once, but you can do the math--1280 calories. Which brings me to this question: "Thin" Mints? Kind of ironic, huh?

Did any of you sell Girl Scout Cookies when you were young? I did, and my daughters did too. I went to the Girl Scouts website to do a little research, and discovered that cookie sales started as early as 1917. Only back then, the cookies were baked at home by the girls, with their mothers' help. Yes, moms were involved even back in those days! I'm down to half a box now, and no visits with Abby in the near future. I think it's time for another visit to the drive-thru. Too bad they're not open 24 hours.

I haven't seen any girl scouts yet...they usually set up shop right in front of Walmart. I am seriously craving those thin mints. Do you think they put something in them to make you addicted...like Chapstick? =D

We make our own...ritz crackers, almond bark and peppermint extract. Kids love them. I have so many little girl scouts in the area I have to ration my buying. Smiles...Renee

Oh mercy me! I have 8 boxes in the freezer, and my son just came home and said he bought a box from one of his students! Oh, you only eat ONE sleeve in a sitting! Hah...I can power down a whole box....that's TWO sleeves in a sitting. NO problem!! But my new love is the box of lemon iced lovelies. Oh they are wonderful. DANGEROUS I tell you. You need to have Abby send you your cookies COD!!!

My family use to buy girl guide cookies when I was younger, in Canada. Though I don't think they were mint ones..I think they were a kind of chocolate with icing type (if I recall correctly?). I don't see them at all over here in the UK though..shame. Enjoy the cookies! :)

Oh yummy! I wish we could get them here in NZ. I used to live in New Hampshire and what a treat girl scout cookies were. Enjoy them! Becks x

I hear ya girl,, I have been known to eat a box or 2 myself. They are great crumbled up in vanilla ice cream.... just sayin' blessing to you.

I love Girl Scout cookies. They are dangerous. Yes my sister and I sold Girl Scouts cookies. My mom was our scout leader. What great memories.

Hi Betsy... Wanted to get back to you with the recipe before I forgot.

Homemade Thin Mints


1 sleeve of Ritz crackers
1 package Chocolate Almond Bark
1/4 tsp of peppermint extract

Step 1: melt chocolate in microwave
Step 2: stir in peppermint extract
Step 3: dip crackers and set on waxed paper
Step 4: chill thin mints in the fridge

Abby has your order in but you have to wait until March! It is a wonderful organization that teaches young girls so much! And their cookies arent bad either!
